Baby Lima Beans
With Tomatoes

Baby lima beans with tomatoes can be prepared by pre-cooking a bag of dried beans, but this recipe tastes just as good if you use a package from the freezer case. High in fiber and an excellent source of nutrition is packed into every bite of this dish. Don't be turned off by all this health talk before you try this combination for yourself.

Ingredients

  • 1/2 head fresh garlic, peeled and sliced
  • 1 T. olive oil
  • 1 T. minced fresh sage or 1/2 tsp. dried sage
  • 2 boxes (10 oz each) frozen lima beans
  • 1 1/2 cups diced tomatoes (or 1 cup tomato sauce)
  • Freshly ground black pepper to taste

In a large heavy saucepan, combine the garlic, olive oil and sage. Cook over low heat about 5-7 minutes till the garlic turns golden.

Add the lima beans and your choice of tomatoes. Bring to a boil, reduce heat and simmer for 20 minutes until beans have absorbed most of the liquid. Season with ground pepper. Makes 6 servings.
