Bacon Salsa Club Wrap:
Mix and Match Combo To Find Your Own Best
A bacon salsa club wrap is so easy to change up, add or subtract ingredients depending on your likes and dislikes and yet you still get excellent results. Switch off the bacon for turkey bacon (reduces fats and sodium), omit the hot peppers if you aren't into fiery foods, use all kinds of lettuce or spinach leaves. The alterations can be unlimited based on your own desires. Ingredients- 2 large ripe summer tomatoes, cut into small chunks
- 1/4 cup red onion, chopped fine
- 1/4 cup chopped fresh cilantro
- 1 T. finely chopped jalapeno peppers
- 1 T. lime juice
- 1/8 tsp. sea salt
- 8 slices turkey bacon,( or reduced sodium regular bacon) cooked and broken into pieces
- 1/4 cup fat free mayonnaise or bottled Italian salad dressing
- 4 10" corn tortillas(preferably sprouted corn tortilla), or whole wheat bread if you prefer
- 2 cups chopped spinach, romaine or red leafed lettuce
Prepare salsa. Combine the tomato chunks, red onion, cilantro, peppers salt and lime juice. Stir all together and set aside. Lay out the 4 tortillas, spread the mayo and then sprinkle with chopped spinach/lettuce. Using a slotted spoon, drain one spoonful of salsa and add to each spinach layer. Sprinkle with bacon pieces. Roll up jelly roll style and cut in half. If you prefer it warmed, wrap in a paper towel and microwave for 10 seconds on high power. Makes 4 servings (2 halves per person) 227 calories, 9g fat (3g saturated), 30mg cholesterol, 625mg sodium, 27g carbs, 2g fiber, 8g protein
