Baked Fish With Sunshine Sauce

Baked fish with sunshine sauce is a simple method of preparation for those people concerned about what do I do with fish. Take any mild solid cut of fresh or frozen fish fillets and top with this fruity sauce for a pleasant start to any excellent meal.

Ingredients

  • Your choice of fish fillets like tilapia, cod, flounder etc.
  • 1/2 tsp. grated fresh orange peel(orange part only)
  • 1/2 cup fresh orange juice
  • 1 T. margarine
  • 1/2 tsp. salt
  • dash ground nutmeg
  • 1 T. mince parsley

Poach the fish in water on stovetop, bake in the oven wrapped in aluminum foil or broil until done. (Fish is done when it turns an opaque color and flakes very easily with a fork.)

For the sauce: Combine all ingredients (except fish) in a saucepan on the stovetop. Heat until warm. Serve over cooked fish. Serves 4.
