Banana Cream Pie: Converting An Old Favorite
For Diabetic Health

Finding a way to make a banana cream pie without all the sugar but still good for your diabetic health is a dream come true for many diabetics. Try this version as soon as possible and be sure you do not mention it is a restricted diet food. You'll be overwhelmed with how many second helping requests you get.

Ingredients

  • 1 cup white grape juice frozen concentrate, thawed
  • 9 T. cornstarch
  • 3/4 tsp salt
  • 6 egg yolks
  • 6 cups milk
  • 3 T. butter
  • 1 T. vanilla

Heat milk until it reaches "fish bubbles" stage. Mix the first 4 ingredients together while you are waiting for milk, add to milk when ready. Continue cooking and stirring until thickened. Remove from the heat, add butter and vanilla. Cool.
Using a low-sugar graham cracker crust, fill the shell with sliced bananas then pour the slightly warm pudding mixture on top of the bananas, spreading to cover every slice. Top with fruit-tee whipped topping.
