Basic Tomato Sauce

Many types of basic tomato sauce are not suitable for any person on a sugar-restricted diet because of the addition of so much sugar as one of the ingredients. In this version, the sugar has been replaced with baking soda to achieve the same desired end result without sending your blood sugars soaring.

Ingredients

  • 1 medium onion, chopped
  • 1 green sweet pepper, seeded and chopped
  • 3 garlic cloves, minced
  • 3 T. olive oil
  • 1 28 oz can crushed tomatoes, no sugar added
  • 1 15 oz can tomato sauce, no added sugar
  • 2 tsp. Italian seasoning blend
  • 1/2 tsp baking soda
  • salt and pepper to taste

In a medium skillet, saute the onion, green pepper and garlic in the olive oil for approximately 6 minutes, until tender.

Add the crushed tomatoes and tomato sauce, stirring to mix with the vegetables. Stir in the Italian seasoning and baking soda. Add the salt and pepper if desired. Lower the heat to a simmer, cook for 30 minutes, stirring occasionally. Makes 6 servings.
