Broccoli With Pasta Soup
Broccoli with pasta soup is quick to whip together but still satisfying and delicious. Stir up a batch and use it for a soup and sandwich for lunch each weekday instead of your usual brown bag fair.
Ingredients
- 3 101/2 oz cans chicken broth
- 4 garlic cloves, minced
- 2 tsp. dried thyme
- 3 cups chopped broccoli
- 6 oz. uncooked whole-wheat pasta-shape of your choice
- 3 tsp. grated Parmesan cheese
In a medium pan, heat chicken broth, garlic and thyme until boiling. Add broccoli and pasta. Reduce heat and cook until pasta is al dente and broccoli is tender, about 10 minutes.
Spoon soup into individual soup bowls and sprinkle with parmesan cheese if desired. Makes 6 servings.
