Brown Rice With Broccoli: A Perfect Blend Of Harmony
Brown rice with broccoli casserole is a perfect blend of vegetables which tastes good and is actually good for you to eat.Care has been taken to include many of the ingredients which will maintain your blood sugars at a level playing field. Beware of substituting ingredients though, although they may sound similar, they will change your body's blood sugar reactions by making them higher.
Ingredients8 servings= 2/3 cup per serving =144 calories each serving - 2 1/2 cups cooked Basmati brown rice
- 2 egg whites
- 1 small onion, chopped
- 1 bunch fresh broccoli, chopped into chunks
- 1 cup non-fat cottage cheese
- 1/2 tsp. pepper
- 1 cup homemade sourdough bread croutons
- 1/2 cup fat-free milk
- Non-stick cooking spray
- 2 T. Parmesan cheese
Preheat oven to 350 degrees. In a small bowl combine all the ingredients except parmesan cheese. Stir gently till combined. Spray a casserole dish with non-stick spray. Pour rice mixture into dish and sprinkle with parmesan cheese. Bake for 35 minutes till heated through.
