Caesar Salad With Grilled Chicken

Caesar salad with grilled chicken is an enjoyable light lunch or brunch entree. This version is also lower in fat and calories but still retains its delicious flavor.

Ingredients

  • 3 T. lemon juice
  • 1 tsp. lemon zest (grated peel of a fresh lemon-no white)
  • 3 garlic cloves, minced
  • 2 tsp. white wine vinegar
  • 4 oz extra virgin olive oil
  • 1 tsp freshly ground black pepper
  • 1 tsp salt
  • 1 lb. grilled chicken strips (buy pre-packed and prepared or make your own)
  • 1 assortment lettuce leaves (ex:romaine, leaf, escarole, etc)torn into small pieces
  • 2 oz grated parmesan cheese

Combine the first four ingredients, mixing well. Pour in the olive oil and stir. Add the salt and pepper. Set aside.
Place an assortment of lettuce on six serving plates. Top with the chicken strips. Drizzle salad dressing over the top of all slowly trying to cover all lettuce leaves. Sprinkle with cheese.Serves 6.
