Cheesy Tomato Omelet

Cheesy tomato omelet is a great breakfast, lunch or dinner time treat. The combination of eggs and many vegetable or meat combos is an extremely popular request as a personal favorite for many a deli patron. Now you can easily make this favorite in your own home.

Ingredients

  • 1 tsp. olive oil
  • 1 T. chopped green onions
  • 1/4 cup chopped, seeded tomatoes
  • 1/4 cup sliced mushrooms, if desired
  • 3 medium eggs
  • salt and pepper to taste
  • 1 1/2 oz shredded cheddar cheese

Heat oil in a small non-stick skillet. Saute onions, tomatoes and mushrooms(if desired) in skillet approximately 4 minutes till tender. Set vegetables aside in a small bowl.

Beat eggs in a small bowl. Stir in salt and pepper and pour eggs into the skillet. Stir lightly until eggs start to set, approximately 15 seconds.

Pull cooked egg up towards center so uncooked portion can flow underneath. Continue this until eggs are set.

Spoon the vegetables onto the top of eggs, sprinkle with cheese. Flip 1/2 of the omelet over the top of other half. Slide the folded omelet onto a serving plate.

If you desire, serve with a heaping tablespoon of Fresh Tomato Salsa across the top. Makes 1 serving.
