Cream Of Cauliflower Soup
Allergy-Friendly and Diabetic Friendly
Surprising as it may seem, this cream of cauliflower soup recipe has absolutely no milk or any milk products in it. Therefore this low calorie, healthy entree can be used as an excellent starter course for any meal or just as it is with a small side salad and some popular bread or toast sticks.
IngredientsServings 2 - 1 cup each
- 4 cups fresh or frozen cauliflower florets
- 1 cup homemade (low sodium) vegetable or chicken broth
- 2 T. extra virgin olive oil
- 1/2 tsp. sea salt
Place the cauliflower in approximately 1" of water in a saucepan and bring to a boil with the lid on. Steam for 3 minutes after the water starts boiling. Pierce with a fork and be sure the vegetable is still firm but softening. Drain when ready. Place all of the ingredients into a blender and process until very smooth and creamy. Reheat on stove if necessary and serve. Additions if desired: chopped onion(green onions are pretty) and a clove of garlic, saute till soft in olive oil. Add 1 tsp balsamic vinegar if desired. Place a small amount on top of each bowl when served for garnish.
