Creamy Broccoli and
Cauliflower With Cheese

Creamy broccoli and cauliflower with cheese is an easy side dish that can be changed to suit your family's likes and dislikes. Try removing the broccoli and changing to carrots or green beans. Whatever is guaranteed to make the rest of the family beg for more.

Ingredients

  • 5 cups coarsely chopped vegetables
  • 1 tsp. butter
  • 1 large onion, chopped
  • 1 garlic glove, minced
  • 1/4 cup all-purpose flour
  • 1 3/4 cups 1% milk
  • salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese
  • 3 T. minced fresh parsley

Bring two quarts of water to a boil. Add the vegetables and cook until tender. (times will vary depending on your choice of vegetable). Drain, then set aside.

In a second pan, melt the butter over medium-high heat. Add the onions and garlic and saute for 6 minutes till softened. Combine the flour and milk (while vegetables saute) and whip with a whisk till smooth. Add flour mixture to the onion and garlic and stir for 3-4 minutes till slightly thickened.. Season with salt and pepper.Stir in the cheese till melted. Gently add and stir in reserved vegetables. Dip into serving bowl and garnish with parsley. Makes 6 servings
