Cucumber Boats

Cucumber boats are perfect for a ladies luncheon, banquet or as an appetizer. They taste delicious but more importantly they are easy to prepare. Change the tastes of them just a little by changing the bacon to diced ham or chopped turkey, whichever is your favorite.

Ingredients

  • 3 slices crisp cooked bacon, chopped into small pieces
  • 1 Roma tomato, chopped into small pieces
  • 1/2 cup finely chopped lettuce and spinach mixture
  • 1 finely chopped green onion, white and green
  • 1 1/2 T. non-fat mayonnaise
  • pinch salt and pepper
  • 1 large cucumber
  • minced fresh parsley, for garnish

Combine the first six ingredients in a small bowl and stir till combined.

Slice the cucumber in half lengthwise (will look like two long canoes). Scoop the seeds out until hollow. Fill the hollow with your vegetable mixture. Sprinkle with chopped fresh parsley. Cut into 1-1 1/2 inch slices to serve.
