Curried Scrambled Eggs

Still fast and easy, but just a slight step above the normal, curried scrambled eggs is a delicious start to the day. Top it off with some whole wheat toast and homemade jam for a treat that lasts all morning till lunchtime.

Ingredients

  • 16 egg whites or 2 cups of egg white product purchased from store
  • 1/4 tsp salt
  • 1/4 tsp. pepper
  • 1 T. extra-virgin olive oil
  • 1 medium onion, chopped
  • 3/4 cup chopped mushrooms
  • 1 1/2 tsp curry powder
  • 1 tomato, seeded and diced

Mix eggs, salt and pepper together in a bowl and stir till blended.

In a large non-stick skillet, heat olive oil over medium heat. Add onion and cook for 5 minutes, stirring occasionally. Add mushrooms and curry powder and cook for 3 more minutes. Add tomato and stir and cook for 2 more minutes. Pour eggs into the skillet and cook, stirring constantly until are are soft setr, approximately 3-4 minutes. Do not overcook.
