Diabetic Appetizer Recipes

Party Foods Still Good
For Diabetic Health

Diabetic appetizer recipes are good whether it is a quick office luncheon or the "games are at your house" this weekend. Just because you need to stay aware of your diabetic health does not mean everyone else has to suffer on some kind of restricted diet. If you can keep the secret quiet, using these diabetic appetizer recipes means the party snacks are safe for you but delicious for them also.

Open-Faced BBQ Chicken Cheesy Crackers

Ingredients

  • 4 slices of lowfat cheddar cheese
  • 2 chicken breast halves, pounded thin
  • 1/4 cup low sugar/low fat diabetic bar-b-que sauce
  • 16 baked whole wheat Triscuit crackers
  • 1 green onion, chopped fine

Preheat the oven to 350 degrees.

Prepare chicken breasts in a non-stick pan coated with olive oil spray. Turn once, add a small amount of BBQ sauce to the top of each piece of chicken. Remove from pan and cut each piece of chicken into 8 slices, all approximately the same size.

Cut each slice of cheese into quarters. Top each piece of chicken with a cheese slice.

Lay out 16 crackers on a cookie sheet. Top each cracker with a piece of chicke, sauce, and cheese. Sprinkle a few pieces of green onion on top.

Place in oven and heat approximately 4 or 5 minutes until cheese entirely melts. Makes 8 servings (2 crackers per person)

Pineapple Shrimp

Ingredients

  • 1 can 14 oz chunk pineapple in its own syrup
  • 2 T. soy sauce
  • 2 T. lemon juice
  • 1 T. canola oil
  • 1 tsp dry mustard powder
  • 24 large shrimp, cooked, shelled and deveined
  • finely chopped peanuts, optional
  • unsweetened flaked coconut, optional

Drain the pineapple into a bowl. Add soy sauce, lemon juice, oil and mustard. Pour over the shrimp and marinate 30 minutes or more. While marinating, soak 8 wooden bamboo skewers for 30 minutes in water.

Alternate 3 shrimp and 4 pineapple chunks on each skewer. Brush with remaining marinade. Place in broiler pan and broil 2-3 inches from heat turning frequently until browned, approximately 3 to 5 minutes. Remove from oven and sprinkle with peanuts and coconut.

Molded Health Salad

Don't let the name of this scare you off. It is really very good. Change the ingredients around to suit your tastes or just for variety as often as you like.

Ingredients

  • 1 envelope unflavored gelatin
  • 1 cup apple juice
  • 1 cup apple sauce
  • 1 cup apple chunks, do not peel
  • 1/2 cup celery, sliced
  • 1/2 cup walnuts or pecans, chopped

Mix first three ingredients together well. Add apples, celery and nuts. Chill until firm.

Cherry Tomato Bob Top

This one is so easy but still so good, they will march right off of the appetizer tray, it seems by themselves.

Ingredients

  • 1 large red skinned apple, scrubbed clean, cored and then cut into 4 wedges
  • 1 large Bartlett pear, scrubbed clean, cored and cut into 4 wedges
  • 4 slices low-fat mozzarella cheese, cut in half
  • 4 slices low-fat cheddar cheese, cut in half
  • 8 bright red cherry tomatoes
  • 8 firm wooden toothpicks or mini shish-ka-bob skewers
  • Optional side dish of dip if desired.

Place 1 slice of each type of cheese cross-wise against apple wedge so it drapes across the wedge from side to side. Top with a cherry tomato, pushing the toothpick through all to skewer them all in place.

Repeat the same steps with the pear wedges also.Serving size: 2 wedges of each fruit per person. 260 calories per serving without any optional did.

Easier Wiener Dogs

Everyone is a fan of wiener dogs or meatballs as an appetizer when served with toothpicks as finger foods. So for the quick and easy version, try the following.

Ingredients

  • 1 jar low sugar or sugarfree spaghetti sauce
  • 1 lb turkey dogs, sliced diagonally in 1" slices
  • 1 lb pre-cooked frozen meatballs
  • your choice of the following for flavor: chopped onion, green pepper strips, hot peppers

Combine all ingredients and marinate in sauce and vegetable ingredients for 6-8 hours or overnight.
Heat dogs and meatballs in sauce until warm. Transfer to a crock-pot to keep warm for serving. Provide toothpicks.

So providing some diabetic appetizer recipes that you can enjoy right along with the rest of the crowd at your party can be just as easy if you be careful and pick the right combination of ingredients.
