Party Fun With Safer Diabetic Health
Not everyone dreams their diabetic birthday cake recipes will be a plain old white or chocolate cake with icing. Sometimes, some of us want variety. So to liven up the event but still retain your diabetic health, try some of the following ideas which will allow you to have a different type of cake (and hopefully the ice cream) and still leave room for the frosting. Or if doing all the cooking and baking is not your idea of a party, try adding a few of the suggestions from having a birthday party with diabetes to make the upcoming event a special day to remember. Old-Fashioned Chewy Fruit CakeIngredients - 1 cup raisins
- 1 cup chopped dates
- 3/4 cup sugar
- 1 cup hot water
- 2 1/2 T. solid vegetable shortening
- 1 1/2 cups flour
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/4 tsp. salt
- 1/4 cup chopped nuts, optional
Preheat oven to 350 degrees.
Place raisins, dates sugar, water and shortening in small saucepan. Bring to a boil and simmer for 5 minutes to plump fruits. Cool. Combine the dry ingredients and then add to the cooled boiled fruits in a bowl. Stir in well. Transfer to a 8X8 baking dish and bake for 35 to 40 minutes. Remove from oven and cool. Sugarfree (or Limited Sugar) Cake FrostingsIf your favorite still happens to be the plain white or chocolate cake, below is some quick ideas to dress it up and make it special for the birthday party.- Orange Vanilla Swirl - makes one cup. Use 1/2 cup dry milk powder and 1/3 cup cold sugarfree orange juice. Blend in your blender on high till the mixture is stiff. Refrigerate promptly. Icing the cake when serving.
 
- Refrigerated whipped topping with chopped nuts, sliced fruit, sprinkled with unsweetened coconut, pumpkin, sesame or poppy seeds, slivered chocolate 70% cocoa bar etc.
- Make a batch of sugarfree pudding mix and icing cake, garnish if desired
- melted jam or jelly all natural fruits and poured on as a glaze
- whipped cream cheese at room temperature
- fat free yogurt with chopped dried fruit pieces ( spread yogurt at serving time to retain consistency)
Birthday Spice FrostingThis next one is a little more special and yummy. A little goes a long way though so it is not necessary to heap it on like a regular cake and frosting.Ingredients - 2 T. soft margarine, trans fat free
- 2/3 cup non-fat dry milk powder
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1/4 tsp allspice
- 1/4 cup apple juice concentrate (straight from the freezer)
- 1/4 cup heavy cream
- 1 tsp. vanilla
Cream together the margarine and milk powder. Stir in the spices until well combined. Add the apple juice concentrate, cream and vanilla and beat on high till creamy.
