Choosing Healthy Options To
Retain Good Diabetic Health

Many parents worry about choosing the right diabetic snacks for kids to retain good diabetic health. Other than the obvious reason of preventing childhood obesity, some of the other important considerations are:

  • reduces the future complications of diabetes, heart disease and stomach and digestive problems

  • reduces dental cavities from tooth decay

  • reduces hyperactive/anti-social behavior in many kids

  • high sugar foods are mainly devoid of any kind of nutritional benefits- they completely lack any trace of important vitamins and minerals

Super Kid-Friendly Sandwich Fixes For
Use As Diabetic Snacks For Kids

Take any item from the table 1 (2 tablespoons) and add to your choice(s) from table 2 (2 tablespoons total). Spread this new combination on any piece of whole wheat bread or pita pockets, whole wheat crackers or a whole wheat english muffin.

Table 1 peanut butter, cream cheese, yogurt, apple butter, ricotta cheese, cottage cheese, chopped hard boiled egg, tiny diced ham chunks, water packed tuna
Table 2 wheat germ, raisins, grated carrots, all-fruit jam or jelly, banana slices, dried apricots, rolled oats, grated carrots, diced apples, sesame seeds and crushed pineapples

Kid Power Fruit Punch

Ingredients

  • 1 banana
  • 1 apple, peeled, cored and sliced
  • 1 pear, peeled, cored and sliced
  • 3/4 cup unsweetened orange juice
  • 1/4 cup non-fat dry milk powder
  • 2 T. raisins
  • orange wedge for garnish ,optional
Blend all ingredients until smooth and creamy in blender. Makes 1 1/2 cups. Serves 2.

Creamsicle Sipper

Ingredients

  • 3 cups cold water
  • 1 6 oz can frozen unsweetened orange juice concentrate, thawed
  • 1 1/4 cup non-fat dry powder
  • 1 banana, peeled
Blend all ingredients in a blender and serve cold.Makes 4 cups= 4 servings

Kid's Trail Mix

Ingredients

  • Unsweetened cereal of your choice, (cheerios, puffed rice or puffed wheat, crispy rice etc.)
  • Low salt pretzel pieces
  • Raisins and asst. dried fruit pieces
  • Sesame, pumpkin or sunflower seeds
  • Unsalted peanuts

Combine any of your choices and store in an airtight container.

Homemade Granola Bars

Ingredients

  • 3 cups apple juice
  • 2 1/4 cups unsweetened granola
  • 5 packages unflavored gelatin
  • 1/4 cup raisins or dried fruit of your choice
Combine 1 cup of the apple juice with all of the gelatin. Let sit until soft. Boil 1 more cup apple juice and all of the gelatin mixture - stir until dissolved.

Remove from heat. Stir in one more cup apple juice, granola and the dried fruit. Pour into an 8x8 baking dish Chill until firm, about 3 hours. Cut into 12 bars, wrap each in plastic wrap. Store in refrigerator. Allow to return to room temperature before serving.

Yogurt Popsicle

Ingredients

  • 1 cup plain yogurt
  • 1/2 cup chopped fresh fruit of your choice

Whisk both in blender until smooth. Pour into popsicle molds or dixie cups. Add popsicle stick and freeze until firm.

Sugarfree Peanut Butter Nuggets

Peanut Butter has still got to be one of the all-time favorites of every child, so to be an instant hit with the whole neighborhood, try these diabetic snacks for kids to be the instant fun favorite for every kid in the block.

Ingredients

  • 1/2 cup homemade peanut butter*
  • 1/4 cup nonfat dry milk powder
  • 1/4 cup unsweetened coconut shreds
  • 1/4 cup raisins
  • 1/3 cup rolled oats
  • 1/2 tsp cinnamon
  • 1/4 tsp wheat germ
  • 1/4 cup unsweetened apple juice frozen concentrate, thawed

Add all ingredients to a medium bowl and stir until mixed thoroughly. Shape into 1" balls. Chill before serving. Refrigerate any leftovers.
Approximately 30 pieces per batch (1" each ball)

*Homemade Peanut Butter

Ingredients

  • 1 cup unsalted roasted peanuts
  • 1 T. Peanut oil
  • tiny pinch salt
Add all ingredients to a food processor fitted with the steel blade attachment.
Process until a smooth paste is formed.
Store covered and refrigerated for up to two weeks Allow to return to room temperature for spreading.

Pineapple Sundae

If you like the next best thing to an ice cream sundae. Try this version as a great after school snack or on a hot summer day.

Ingredients

  • Pineapple tidbits in its own juice, well drained
  • 2 T. non-fat vanilla yogurt
  • Dry-roasted sunflower kernels
Place the pineapple tidbits in a small bowl. Add 2T. yogurt to the top as garnish. Sprinkle with sunflower kernels.

Tortilla Toast Tidbits

For the mouth-feel of potato chips or crackers, try this recipe for a quick and tasty treat.

Ingredients

  • 1 whole wheat tortilla, lightly brush with olive oil
  • garlic powder, salt and pepper, chili powder or spices of your choice
Cut each tortilla into 12 wedges and toast on a lightly oiled (olive oil) baking sheet for 5 to 10 minutes at 350 degrees. Allow to cool before eating.

All of these diabetic snack foods for kids can be safely used for the whole family as a favorite snack time enjoyment. But just remember, do not worry that all of your former family favorites now must be completely off the menu to be replaced with some awful rendition of a "fake" substitution. Learning how to make some of the classic foods healthier is easy if you just start by re-learning a few of the basics.
