Egg Substitutes:
What Else Is In The 'Fridge?

Many people think of egg substitutes as the little yellow boxes of "replacement eggs" that you get at the grocery store in the egg and dairy section. Actually this is an alternative to normal eggs for people who are trying to control their cholesterol levels.

This is because these egg substitutes contain little to none of the egg yolk. It is an egg white mixture only. Medically, it is believed that by reducing your consumption of the egg yolk, you should be able to better control your cholesterol numbers.

Alternatively, there is powdered egg substitute in your store's baking goods aisle. The powdered form is best used for all of your baking needs.

Why Do People Not Use Eggs?

Some people actually elect to not use any forms of egg or egg products in their diet. Several reasons are the choice to follow a vegan diet (a person who elects not to consume or use any animal products or its by-products). Also, some people abstain to protest the inhumane treatment of laying chickens in large factory farms. Therefore by trial and error and with some practice, you will never have to crack open an egg again.

Common Substitutes For One Egg

  • 1/4 cup canned pumpkin

  • 1/4 cup pureed prunes

  • puree'd fruit plus 1/2 tsp baking powder

  • 2 Tbsp arrowroot flour

  • 1Tbsp. ground flaxseed plus 3 Tbsp warm water

  • 2T water plus 1T. oil plus 2 tsp. baking powder

  • 1/4 cup silken tofu combined with the liquids in recipe

  • 1/2 ripe banana

  • 1/4 cup applesauce

  • 2 Tbsp. cornstarch

  • 2 Tbsp potato starch

  • 1/4 cup mashed potatoes

  • pureed plain tofu

Responsibilities Of An Egg In Cooking

All eggs have five major responsibilities in cooking or baking. These are:

  • Rising refers to baked goods such as cakes, cookies and biscuits. Substitute flaxseed meal, lecithin, carbonated water, baking powder and vinegar or yeast.

  • Thickening is for sauces or gravies. It is recommended to use arrowroot flour. Use only 1/2 the amount as regular flour.

  • Binding is what holds the product together such as meat loaf, meatballs, etc.. It is recommended to use flaxseed meal, agar, arrowroot flour, lecithin, baking powder plus oil, tofu, soy milk or soy yogurt

  • Whipped/Frothy Appearance - Replace with xanthan gum. 1/4 tsp xanthan gum plus 1/4 cup water in the equivalent of one egg. Mix, allow to thicken and then whip.

  • Mealtime Treats - Egg sandwich, hard-boiled eggs etc.

So whether your intentions are to cut back on real eggs for health reasons or as a conservation effort, with time and practice you will find you never have to purchase whole eggs again. Egg substitutes are a viable alternative that can replace whole eggs in all of your cooking and baking needs.
