Fettuccine With Broccoli Cheese Sauce
Fettuccine with broccoli cheese sauce is an all-time favorite if you happen to be a macaroni and cheese lover. It just has the added advantage though that it includes some of those green vegetables-which happen to be good for you-included in there also. Ingredients- 8 oz whole wheat fettuccine pasta
- 2 cups broccoli florets, trimmed
- 2 T. butter
- 2 T. whole-wheat flour
- 2 cups 1% milk
- 2/3 cup part-skim ricotta cheese
- 1/2 cup grated parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
Cook pasta according to package directions. Drain and keep warm.Meanwhile, cut broccoli into small bite size pieces. Cook in boiling salted water, approximately 5 minutes. Drain.
Melt butter in a second saucepan. Stir in flour, cooking and stirring constantly for one minute. Stir in milk and continue cooking and stirring until thick, approximately 10-15 minutes. Add both cheeses and salt and pepper. Cook till cheese melts, approximately 3-5 minutes. Stir in warm broccoli.
Spoon warm pasta onto serving plates. Top with broccoli cheese sauce. Makes 4 servings.
