Fresh Tomato Salsa
Fresh tomato salsa is at its best during late summer to early fall when tomatoes are garden fresh. But because fresh tomatoes are available year-round now at major grocery stores, this recipe can be enjoyed year round.
Ingredients
Makes 2 cups
- 4 large plum tomatoes
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- 1 Tb. chopped fresh oregano (or 1/2 Tb. dried)
- 1 tsp. chopped jalapeno pepper(omit if you do not like it hot)
- 1 T. olive oil
- 3 tsp. lime juice
- Salt and pepper to taste
Cut tomatoes in half and remove seeds if desired. Chop the tomatoes and place in a bowl.
Combine the rest of the ingredients in the bowl and stir well. Allow to sit for 30 minutes for flavors to blend at room temperature or refrigerate, covered. Best if used within 5 hours. Serve at room temperature.
