Fresh Zucchini Soup:
From A Garden's Bounty

Fresh zucchini soup is one of the answers to that age-old question every year- "What Do I Do With All This Zucchini?" Put together a batch of this warm and inviting soup and your guests will be asking for more.

Ingredients

8 servings = 3/4 cup/ serving =60 calories/serving

  • 1 1/2 T. olive oil
  • 1 1/4 tsps dry italian seasoning
  • 1 1/2 cups chopped onion
  • 1 1/2 cups chopped celery
  • 1 1/2 cups grated zucchini, cut off ends but do not peel
  • 2 1/2 cups skim milk
  • 1/4 tsp pepper
  • 2 low sodium chicken bouillon cubes

Saute the onions, celery and seasonings in olive oil until onions are transparent. Add the zucchini and chicken broth. Simmer for 10 minutes. Turn heat off.

Just before serving, add the skim milk, pepper and bouillon. Heat to warm but do not boil. (Milk will foam up and boil over)
