Frozen Pudding Cups
Frozen pudding cups is an ideal treat for that hungry batch of "kids", no matter what their age. This recipe is so easy but it can actually be good for you too! Ingredients- 1 package (4 oz size) sugarfree instant pudding
- 2 cups 2% milk
- decorations of your choice (chopped nuts, sprinkles, dried fruit bits, mashed fresh fruit, chocolate slivers etc.)
Arrange 6 pieces (5 oz.) paper cups on a small tray. Add approximately one T. off decorations of your choice to each cup.
Combine pudding mix and milk in a large bowl. Blend on low speed on an electric mixer approximately 2 minutes. Add fruit bits or mashed fruit and stir quickly just till stirred in. Pour mixture into the six paper cups. Insert wooden pop stick in the center of each cup. Freeze until firm, about 5 hours.
Tip***To help prevent messy hands, take a 2X2 inch piece of aluminum foil, cut a hole in the center and place on top of the stick. Push it down to the pop and unmold the pudding pop (turn it over, press on the bottom of the cup and the pop should pop out.
