Grilled Pork Chops
With Pineapple Slaw

Grilled ham slices, spare ribs or grilled pork chops with pineapple slaw all are a delicious change of pace from the usual dinner faire. As you can tell, this slaw is excellent served right along side of any juicy tender cut of pork.

Ingredients

  • 6 pork loin chops (approximately 1 1/2 lbs total)
  • 20 oz can crushed pineapple in its own juice
  • Ground black pepper to your taste
  • 2 T. sliced green onions
  • 1/2 cup finely chopped red sweet pepper

Trim all visible fat from pork chops. Place all of the chops in a large plastic bag. Drain the pineapple juice into the bag to marinate pork chops. Reserve the pineapple. Close the bag and marinate pork overnight, turning meat occasionally.

Remove chops from the bag and place on grill. Discard marinade and juice. Grill for approximately 10 minutes, turning once during this time.

For slaw- combine the reserved pineapple, sweet pepper and green onion in a dish and cover. Refrigerate overnight or combine just before serving. Makes 6 servings.
