Homemade Broccoli Soup:
A Creamy Alternative

Homemade Broccoli Soup has that fresh from the kitchen flavor that is not possible from a can. Actually, if you are a fan of cauliflower, you can easily add a portion of this also or just exchange all of the broccoli for cauliflower. Pick your favorite and enjoy!

Ingredients

6 serving= 3/4 cup per serving= 62 calories

  • 2 T. low sodium chicken broth
  • 2 T. all-purpose flour
  • 1/2 tsp. salt substitute
  • pepper to taste
  • 1 1/2 cups low sodium chicken broth
  • 2 cups fat-free skim milk
  • 1/4 cup nonfat dry milk powder
  • 10 broccoli spears, cooked

In a small saucepan place the 2 T. of chicken broth and slowly add the flour, whisking until smooth. Warm over medium heat. Add salt substitute and pepper. Gradually add the 1 1/2 cups chicken broth, stirring continuously until the base thickens. Add the milk and stir till smooth.

Blend the nonfat dry milk and one-half the cooked vegetable until smooth. Add to the saucepan and stir. Cohop the remaining vegetables and stir into the soup. Simmer 5 minutes and serve.
