Italian Bruschetta

Don't let the name of this appetizer,Italian Brushetta, scare you into not trying it. Italian bruschetta is nothing more than a crusty selection of bread served with tomatoes and spices. Think a quick and easy version of pizza without the cheese topping. But then, if you like the cheese go ahead and add it also.

Ingredients

  • 1 can regular diced tomatoes, drained
  • 2 T. chopped fresh basil
  • 1 T. extra virgin olive oil
  • 1 clove garlic, finely chopped
  • 1/2 tsp oregano
  • 1/4 tsp. celery seed
  • 16 thick slices toasted baguettes (or crusty bread like french bread, italian loaf etc)

In a medium bowl, mix the tomatoes and all of the spices.
At serving time, spoon the tomato mixture on top of the crusty bread and serve.

If you prefer, place the slices of bread for several minutes in a 400 degree oven till warm. Serves 16.
