Italian Style Meat Roll

Italian style meat roll should be a crowd-pleaser if you happen to be a fan of meat loaf crossed with pizza. This combination should be a very popular addition to you and your family's recipe favorites.

Ingredients

  • 1 cup whole wheat bread crumbs
  • 2 eggs, beaten
  • 2 T. chopped fresh parsley (1 T. dried)
  • 1/2 cup no salt added tomato juice
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 2 lbs. lean ground beef
  • 6 slices lean deli ham
  • 6 oz. shredded mozzarella cheese

Preheat oven to 350 degrees.

Combine in a large bowl, breadcrumbs, eggs, parsley, tomato juice, salt and pepper, garlic and oregano. Stir till well mixed.Add ground beef and mix well.

On a sheet of waxed paper lay ground beef mixture, cover with another sheet of waxed paper and then flatten beef mixture out into a 12 X 10 rectangle.

Place ham slices on top of beef mixture, sprinkle with shredded cheese. (allow 1/2" border all the way around)

Roll up meat, starting at the 10" side until tight. Press edge into meat mixture.

Place seam side down on a baking sheet. Bake for 60-75 minutes until done.

Remove from oven and allow to sit for 10 minutes before cutting.Makes 8 servings.
