Meal In A Muffin Pan

This recipe, meal in a muffin pan, is great for busy mornings. A few minutes to prepare, pop it in the oven and go get ready for work. By the time you are dressed, breakfast is ready in the kitchen.

Ingredients

  • 1 can (15 oz) corned beef hash
  • 6 eggs
  • salt and pepper to taste
  • 1 box (8 1/2 oz) corn muffin mix

Preheat oven to 400 degrees.

Grease a 12 cup muffin pan with non-stick cooking spray. Divide hash and press on bottom and up the sides on six of the cups. Break an egg into the center of each hash cup, season with salt and pepper. Mix the muffins according to package directions. Spoon this batter into the other six cups. Bake at 400 degrees for approximately 15-20 minutes until muffin tops are browned. Makes 4-6 servings.
