Mediterranean Chicken
and Rice Casserole

Mediterranean chicken and rice casserole is a pleasing combination of vegetables, protein and grains that is quick to assemble. Don't let the long list of ingredients scare you away, this can be whipped up and be in the oven in no time at all.

Ingredients

  • Non-stick cooking spray
  • 1 cup finely chopped onion
  • 1 cup water
  • 1 pkg. (10 oz) frozen spinach, thawed and drained well
  • 1 cup quick-cooking brown rice
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • 3/4 lb. chicken tenders
  • 2 tsps. Greek herb blend (mix oregano, rosemary and sage in equal amounts)
  • 1/2 tsp lemon pepper seasoning ( or 1/4 tsp ground pepper and 1/4 tsp lemon zest)
  • 1 T. extra virgin olive oil
  • 1 medium lemon, quartered

Preheat oven to 350 degrees.

Spray a non-stick oven-proof skillet and heat over medium heat. Add onion and cook until limp, about 4 minutes. Add water, spinach, rice, salt and cayenne pepper. Stir till well blended. Remove from heat.

Place chicken tenders on top in single layer. Sprinkle with Greek seasoning and lemon pepper seasoning. Cover with foil and bake 25 minutes or until rice is tender.

Remove foil, and drizzle all over the top with olive oil. Serve. Garnish with lemon wedges if desired. Makes 4 servings.
