Oven Baked Grilled Cheese: A Soup And Sandwich Favorite
An oven baked grilled cheese and a steamy bowl of soup hits the spot on a cold wintry day for a lunchtime treat. With a few substitutions in ingredients, this favorite goes from a no-no on a diabetic's diet because of high fat, carbohydrates and calories to a lunchtime favorite with no loss of flavor and texture.
Ingredients4 servings=1 sandwich per serving=119 calories - 2 egg whites
- 2 T. fat-free milk
- dash of paprika
- 4 slices oat bran bread
- non-stick cooking spray
- 4 slices fat-free cheese slices
- Kosher dill pickle slices for garnish
Preheat oven to 400 degrees. Whisk in a small bowl the egg whites and milk. Dip each bread slice in egg mixture on both sides. Transfer to a baking sheet coated with non-stick spray. Sprinkle each slice with a dash of paprika. Bake until golden brown on each side. Remove from oven, immediately add slice of cheese and allow to melt slightly. Top with dill pickle to serve.
