Picnic Macaroni Salad: A Perennial Favorite
Picnic macaroni salad is good any time of the year for a quick salad addition for soups, sandwiches, party foods or a lunchtime treat at your own job. For a slight change in flavor, substitute some of your own favorite vegetables for the ones included here. Ingredients6 servings =1 cup/serving =138 calories/serving - 3 cups cooked macaroni, drained and rinsed in cool water
- 1/3 cup chopped celery
- 1 cup chopped green onions, bulb and the greens, cooked
- 1 cup chopped broccoli, cooked till crisp tender
- 1 cup chopped cauliflower, cooked till crisp tender
- 1/2 cup fat free plain yogurt
- 1 T. yellow mustard
- 3/4 tsp dry italian seasoning mix
- 1/2 tsp. parsley flakes
Cook the macaroni, drain, rinse in cool water and drain well. Cook the vegetable combination together until crisp tender, drain well. Combine these two in a large bowl. In a small bowl, mix the yogurt, mustard, and seasonings till well blended. Add tho the vegetable/pasta mixture. Stir well. Chill to blend flavors.
