Pineapple Apricot Smoothie
Pineapple Apricot Smoothie has a full serving of fruit, is actually good for you and yet it still tastes delicious too. It's not often a snack food can live up to that reputation.
Ingredients
- 1/3 cup sugarfree apricot preserves
- 1 cup sugarfree vanilla ice cream or frozen yogurt
- 1 cup chopped fresh pineapple
- 1/2 cup skim milk
- 1/8 tsp. vanilla or almond extract
- pineapple wedges for garnish, optional
In a blender combine the first five ingredients, blend well until smooth. Pour into pre-cooled glassware (frozen glassware works well), garnish with pineapple wedge and serve immediately.
Makes 2 servings.
