Reduced Fat Potato Salad:
The New Super Food

Don't be afraid to try reduced fat potato salad because of its name. Not all foods that have been re-worked to a healthier version are an out and out flop. This version is still moist and creamy, full of flavor and still lower in carbohydrates, fat and sugars. Give it a try today and see for yourself, sometimes change can be good and good for you!

Ingredients

6 servings =1/2 cup/per serving = 66 calories

  • 2 cups diced potatoes, already cooked
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 1 dill pickle, chopped
  • 1/2 cup fat free plain yogurt
  • 1 T. dijon mustard
  • 3/4 tsp (dry spices) Italian seasonings
  • 1/2 tsp dried parsley flakes
  • dash paprika

In a medium bowl combine potatoes, onion, celery and pickle.

In a separate container combine the yogurt, mustard, italian seasonings and parsley. Stir till well combined. Add to the vegetables and mix gently. Dust the top with a sprinkling of paprika. Cover and refrigerate several hours to blend flavors.
