Simple Side Salad:
Using Fresh Vegetables To Achieve Good Diabetic Health
This simple side salad can be prepared and ready for the table in mere minutes but its value for good diabetic health is invaluable.
Using almost all ingredients commonly found in the refrigerator and kitchen anyway, you can usually whip this together while everyone is making their way to the table. Often, during the summer months, one quick trip to your backyard and you can pick most of the simple ingredients fresh from your own garden. Simple Side SaladIngredients - 2 large fresh tomatoes, sliced in 1/4" slices
- 2 thin slices mozzarella cheese
- 10 fresh basil (or spinach) leaves
- 1 tsp. balsamic vinegar
- 2 tsps. extra virgin olive oil
- sprinkling of dried basil (if using spinach leaves)
Cut the sliced cheese into 1/4" wide strips. Alternate tomato slices and spinach/basil leaves with the tomato slices on a salad plate. Top with cheese slices. Sprinkle with extra dried basil if desired. Combine the balsamic vinegar and olive oil and mix well. Sprinkle over salad. Makes 2 servings.
