Spaghetti Casserole

Pasta is considered to be one of most people's absolute favorites, so Spaghetti Casserole can be considered #1 before you even take a bite. This recipe is a winning combination of a true spaghetti with meat sauce dinner fresh from your oven.

Ingredients

  • 8 oz spaghetti, broken in half, not cooked
  • 1/4 cup Parmesan cheese
  • 1/4 cup egg white substitute
  • 1/2 package frozen spinach, thawed and drained
  • 3/4 lb lean ground turkey or ground beef
  • 1/3 cup chopped onion
  • 2 cups pasta sauce
  • 1/2 cup part-skim mozzarella cheese
  • 1 green pepper, seeded and chopped

Preheat oven to 350 degrees.

Spray an 8" square baking dish with nonstick cooking spray.

Cook spaghetti according to package directions, omitting the salt and oil. Drain and return to saucepan. Stir in the Parmesan cheese and egg substitute. Pour this into your 8" prepared dish.

Cook turkey, onion and green pepper in a skillet until meat is lightly browned, stirring to break up pieces.Drain off any fat. Add pasta sauce and spinach. Spoon mixture on top of spaghetti.Sprinkle mozzarella cheese over the top.

Bake in preheated oven, covered with aluminum foil, until bubbly- approximately 45 minutes. Let stand 10 minutes before cutting into squares to serve. Makes 6 servings.
