Stir-Fried Zucchini

Stir-fried zucchini is a quick and easy side dish for any entree but also great for lunch by itself. After that mid-season crop arrives and you have no idea where to go with it all, try giving this recipe as an accompaniment when giving part of nature's bounty to all your friends and family.

Ingredients

  • 2 T. olive oil
  • 1 T. unsalted butter
  • 1 yellow onion, chopped
  • 4 medium zucchini
  • 1/2 tsp. salt
  • 1/2 tsp red pepper flakes

Cut zucchini into halves or thirds to approximately six inch lengths. Julienne each chuck.

Heat the olive oil, butter and onion for about 3 minutes over low heat.

Raise the heat to medium add, the zucchini, salt and red pepper flakes. Saute, mixing often about 5 minutes, until zucchini crisp-tender. Serve hot.
