Sweet Potato Coins

Even those die-hards that say they don't like sweet potatoes will learn to love this one. Sweet Potato Coins are good for you to eat and good to eat all at the same time.

Ingredients

  • 3 T. unsweetened orange juice
  • 2 tsp canola oil or olive oil
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
  • 2 large sweet potatoes, peeled and sliced into 1/4" slices

Preheat oven to 350 degrees.

In a small saucepan everything except sweet potatoes. Stir. Bring to a boil, reduce heat and simmer for 3 minutes.Remove from heat allow to cool.

Place sweet potato slices in a large bowl. Pour juice over top and mix well. Drain.

Spray a baking sheet with non-stick spray. Arrange sweet potatoes on the tray and bake for 30 minutes.
