Taco Salad
Do you love taco salad? Unless you are into making your own corn chips, which are traditionally full of sugar, substitute shredded lettuce instead. It will actually be healthier for you and still tastes just as good.
Ingredients
- 1 1/2 lbs. lean ground beef
- 1 medium onion, chopped
- 4 cloves garlic, chopped
- 1/4 tsp. cayenne pepper
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 tsp. ground cumin
- 1 tsp. chili powder
- 1 15 oz can tomato sauce- check label for sugar
- 4 cups romaine lettuce , shredded
- 6 T. low-fat grated cheddar cheese or your choice
- 2 cups Fresh Tomato Salsa
Spray a non-stick skillet with cooking spray and heat pan for 1 minute. Add ground beef, onion and garlic. Cook over medium heat until meat is cooked thoroughly.
Drain oil from pan and return pan to heat. Add cayenne pepper, salt and pepper, cumin, chili powder, and tomato sauce. Mix well, stirring occasionally and allow to simmer for 20-30 minutes on very low heat.
Arrange lettuce on dinner plates. Top with meat mixture then with Homemade Tomato Salsa. Sprinkle each plate with cheese.
