Turkey Chili

Although chili is considered high in fat and calories, this version, Turkey Chili, is a lower version but still retains all the flavor of the original.

Ingredients

  • 1 Lb. ground turkey breast
  • 1 medium onion, chopped
  • 1 green sweet bell pepper, chopped
  • 1 T. olive oil
  • 2 cups water
  • 1 (16 oz) can chopped tomatoes
  • 2 T. tomato paste
  • 2 T. spice blend(garlic, oregano, basil) or spices of your choice
  • 1-2 T. chili powder (to your taste)
  • 1/2 tsp. red chiles, optional- very hot
  • 2 chopped green onions, optional
  • shredded cheddar cheese, optional

Saute the turkey breast, onion and green pepper in olive oil until browned and vegetables limp and tender.

Add the tomatoes, tomato paste, and all spices. Simmer for approximately one hour on low heat. Add more water as needed if mixture gets too thick.

To serve, spoon chili over cooked brown rice or spoon into a bowl as is. Top with green onions and cheddar cheese. Makes 4 servings.
