Vegetable With Pasta Soup:
A New Twist On An Old Favorite

For a unique twist on an old favorite, try some vegetable with pasta soup for a comforting dinner tonight. Add a side of yam biscuits with a simple dessert and you have the start of an excellent meal.

Ingredients

8 servings= 1 1/2 cups per serving=172 calories per serving

  • 1 cup chopped onion
  • 3/4 cup carrot slices
  • 3/4 cup sliced celery
  • 1 clove garlic, minced
  • 6 1/2 cups low sodium V8 juice or store brand
  • 6 cups water
  • 1 can (28 oz) whole tomatoes packed in its own juice
  • 1 can (6 oz) tomato paste
  • 2 tsp salt free seasoning
  • 3 cups chopped green cabbage
  • 1 cup fresh (or canned, drained and rinsed) green beans
  • 1 tsp Italian spice seasoning blend(oregano, basil and garlic)
  • 2 cups cooked pasta or macaroni, shape of your choice

Place all of the ingredients except pasta and italian seasoning mix in a large stew pot. Bring to a boil, reduce heat to low and simmer for 1-1 1/2 hours till vegetables are tender. Add the italian seasoning blend after 1 hour for flavors to blend. Turn soup off, add cooked pasta, warm the pasta and serve.
