Vegetables With Rice And Pecans:
Quick, Easy and Great
For Diabetic Health

Vegetables with rice and pecans combines three great flavors all in one dish which does contain a side dish perfect for many occasions, but still yields greater diabetic health.

Ingredients

  • 1/4 stick butter
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/4 cup chopped green sweet peppers
  • 1/4 cup dried parsley flakes
  • 8 cups whole grain rice, prepared by package direction
  • 4 T. olive oil
  • 2 tsp. dried thyme
  • 1 tsp. sage
  • 1 tsp garlic powder
  • 1/2 tsp ground cloves
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 2 cups chopped pecans

Melt the butter in a pan and add the next 4 ingredients. Saute approximately 5-7 minutes till soft and transparent.

Stir in the rice and olive oil and mix till combined. Stir together the seasonings in a separate dish then add to mixture. Add pecans. Stir well till everything is blended and heated through.
